TREASURES FROM WATER

While growing up, I was made aware of a famous Bengali proverb describing Bengal as a land where there is always rice in the house and fish in the pond. This saying has lasted with time, more so when it comes to fish. The sight of a shining, silvery Hilsa is a treat to every Bengali eye. Added to it is the abundance of saltwater fish from the Bay of Bengal. I have a pond in my garden house. I am growing popular Bengali varieties of fish. Nothing can give me bigger pleasure than cooking with fresh fish from my own pond.

1 tablespoon sesame oil
2 tablespoons garlic, minced
1 tablespoon coriander root, minced
2 teaspoons fresh red chillies, crushed
2 tablespoons soya sauce
1 tablespoon oyster sauce
6 shrimps (350 g), washed, shelled,
deveined, tail on
¼ teaspoon white pepper powder
¼ cup spring onion cut into round slices
2 tablespoons coriander
leaves, chopped

1 tablespoon sesame oil
২ টেবিলল চামচ রসুন, কিমা করা
১ টেবিল চামচ ধনেপপাতার গুঁড়ি, কিমা
২ চা চামচ তাজা লাল মরিচ, ছেঁচা
2 tablespoons soyaa sauce
1 tablespoon oyster sauce
৬ টি চিংড়ি ( ৩৫০ গ্রাম), ধুইয়ে লেজ রেখে মাথা বাদ দিয়ে খোসা ছাড়িয়ে, পিঠের বালির শিরাটি ফেফেফেলে নেওয়া
¼ চা চামচ সাদা গোলমরিচের, গুড়ো
¼ কাপ পেয়াজপাতা, রিং করে কাঁটা
২ টেবিল চামচ ধনেপাতা, কুঁচি

DETAILS :

IN a bowl mix sesame oil, garlic, coriander root, fresh chillies, soya sauce, and oyster sauce. Add the shrimp and let it marinate for 10 minutes.

HEAT water in a steamer and steam the marinated shrimps on high heat for 6-7 minutes.

SPRINKLE with white pepper powder, spring onion, and coriander leaves. Serve hot.
