OFFAL ADVENTURES A FAMILY FAVOURITE

Offal is the collective term for the internal organs and entrails of a butchered animal. Some cultures strongly consider offal as food to be ‘taboo’, while others use it as delicacies. Such as foie gra, pate, and haggis—are internationally regarded as gourmet food in the culinary arts. Fish offals can be very tasty. Delish is the word for offal dishes for me. It is precisely because of this I have included a separate chapter on offal dishes in this book. I would recommend using fresh ‘offals’ for cooking.

500 g fresh beef spleen
¼ cup mustard oil
2 teaspoons yellow mustard paste
2 teaspoons dry chilli powder
1 teaspoon turmeric powder
1 tablespoon garlic paste
2 teaspoons ginger paste
1 teaspoon salt
Serve with tomatoes, onions, and
green chillies

¼ কাপ সরিষার তেল
২ চা চামচ হলুদ সরিষার পেস্স্ট
২ চা চামচ শুকনো মরিচের গুঁড়া
১ চা চামচ হলুদ গুঁড়া
১ টেবিল চামচ রসুন, বাটা
২ চা চামচ আদা, বাটা
১ চা চামচ salt
পরিবেশন করুন, টমেটো, পেঁয়াজ ও কাঁচা মরিচ দিয়ে

DETAILS :

PREHEAT the oven to 200ºC.

TRIM the outer skin and fat from the spleen with a knife. Rinse with cold running water to remove any excess blood. Simmer the water in a pan. Place the beef spleen in the simmering water and cook for 10 minutes. Remove the spleen from the water with a tong and allow it to cool.

CUT the spleen into big pieces. In a baking tray, mix all the ingredients from mustard oil to salt with the spleen. Cover with foil paper. Bake in the preheated oven for 45 minutes or until soft and tender (if overcooked the spleen will become rubbery). Reduce any extra liquid after baking, taste, and adjust the seasoning.

FOR individual servings, cut the big pieces according to the glass sizes. Garnish with tomatoes, onions, and green chillies. Serve immediately.
