Poultry products have a ubiquitous presence in the Bangladeshi cuisine. The primary source of poultry comes in the form of country grown free range chicken because of the juicy bones and the tenderness of the meat. These days, the modern “farm chicken” has also gained in demand. The fancier poultry in the form of pigeon, quail, and Turkey is more of an urban delight in Bangladesh. I am fortunate to grow my own poultry products in my garden house. Here are my delicious dishes for you all.

CHICKEN MARINADE:
2 boneless chicken breast (about 200 g each) 1 tablespoon Worcestershire sauce 1 teaspoon granulated garlic 1 teaspoon granulated ginger 2 teaspoons white birds’ eye chilli paste (page 351) 1 teaspoon salt ½ teaspoon freshly cracked black pepper 2 tablespoons dried shrimp meat (page 354) 2 turmeric flowers Butcher twine ¼ cup oil
২টি bone হাড়বিহীন মুরগির বুকের মাংস (প্রতিটি প্রায় ২০০ গ্রাম) ১ টেবিল চামচ ও ওরচেস্টারশায়ার সস ১ চা চামচ দানাদার রসুন ১ চা চামচ দানাদার আদা ২ চা চামচ সাদা বার্ডস আই চিলি পেস্ট (পৃষ্ঠা ৩৫১) ১ চা চামচ salt ১/২ চা চামচ কালো গোলমরিচ, আধ ভাঙ্গা ২ টেবিল চামচ শুঁকনো চিংড়ীর meat ( পৃষ্ঠা ৩৫৪) ২ টি হলুদের ফুল বুচার টুটুইন ¼ কাপ তেল
DETAILS :
WASH and drain the chicken pieces well. Cover with cling film and pound with a meat mallet to an even thickness. Marinate the chicken with all the marinade ingredients from Worcestershire sauce to black pepper for 30 minutes.
SOAK the dried shrimp for 20 minutes. Cut the thick stem of the turmeric flowers 3 inches from its bottom. Boil the flower in salted water until ¾ tender, remove and shock with ice-cold water.
PREHEAT the broiler of the oven to 200ºC for 20 minutes. WRAP each chicken breast with a turmeric flower and tie it with butcher twine.
HEAT oil and fry the chicken wraps on medium heat for 3 minutes on each side. Remove to a baking tray and broil in the oven for 8 minutes.
IN the meantime, fry the shrimp in the same oil and remove them to parchment paper. Once the chicken is done, serve it along with the fried shrimp.
