A Condiment is anything added to food to enhance its flavour after it has been prepared. It can be a sauce, a spice mix, a pickle, a vinaigrette, or any other preparation.

10 dried red spur chillies ¼ teaspoon salt 1 tablespoon galangal, chopped 3 tablespoons lemongrass, chopped ½ teaspoon kaffir lime rind, finely grated 3 tablespoons shallots, chopped 2 tablespoons garlic, chopped 2×2 inch foil paper 1 teaspoon shrimp paste 1 teaspoon coriander seeds
DETAILS :
CUT the dry chillies into small pieces, deseed and soak in water for 10 minutes. Dry roast the coriander seeds and make a fine powder.
IN a mortar, add chillies and salt and pound thoroughly. Add all the ingredients from galangal to garlic and pound to make a fine paste.
FOLD the shrimp paste with foil paper and warm it on the stovetop till the aroma develops. Add the shrimp paste and coriander powder to the pounded mixture, and mix well.
