A Condiment is anything added to food to enhance its flavour after it has been prepared. It can be a sauce, a spice mix, a pickle, a vinaigrette, or any other preparation.

DRIED SHRIMP MEAT

1-litre water
1 tablespoon sea salt
1 kg small-sized shrimp, skin on

DETAILS :

IN a big pot, boil water, and add the sea salt. Wash and drain the shrimp with the skin and head-on. Add shrimp to the boiling water. Boil for 2 minutes. Remove from the heat. Let the shrimp rest in the liquid for 1 to 2 hours. Drain and sun-dry depending on the weather. It is best to use a dehydrator.

ONCE the shrimp has dried up, put them in a ziplock bag and squeeze to remove the skin. Be careful while squeezing.

AFTER the skin has been removed, check whether they are pale. Pale indicates that they have dried properly. Skin that is not pale needs to be dehydrated again.
