CONDIMENTS

A Condiment is anything added to food to enhance its flavour after it has been prepared. It can be a sauce, a spice mix, a pickle, a vinaigrette, or any other preparation.

KASHMIRI ACHAR/SWEET MANGO PICKLE

1 kg raw mangos
¼ cup of salt
1 ½ kg sugar
1 ½ cups white vinegar
¼ cup dry chilli, thinly sliced
½ cup ginger, thinly sliced
1 tablespoon salt
½ teaspoon mace powder

১/২ চা চামচ জয়ত্রী গুড়ো

DETAILS :

WASH the mangos. Peel (I prefer not to peel if the seed inside is soft) and slice each mango into 6 pieces and discard the seed. Marinate with ¼ cup salt for 12 hours in the refrigerator. Wash again, pat dry and wipe with a clean cotton cloth. Set aside.

IN a deep pot, except for the mace powder, mix all the ingredients along with the mango pieces and cook on low heat for 8-10 minutes until the sugar syrup becomes thick and the mangos are ¾ tender, sprinkle the mace powder. Taste and adjust the achar if needed. Remove from heat; the syrup will thicken after cooling.

LET the pickle cool at room temperature. Store in sterilized bottles and preserve in the refrigerator.
