OFFAL ADVENTURES A FAMILY FAVOURITE

Offal is the collective term for the internal organs and entrails of a butchered animal. Some cultures strongly consider offal as food to be ‘taboo’, while others use it as delicacies. Such as foie gra, pate, and haggis—are internationally regarded as gourmet food in the culinary arts. Fish offals can be very tasty. Delish is the word for offal dishes for me. It is precisely because of this I have included a separate chapter on offal dishes in this book. I would recommend using fresh ‘offals’ for cooking.

KIDNEY PREPARATION
1 kg fresh beef kidney
1 cup white vinegar
½ teaspoon salt

KIDNEY MARINADE:

2 tablespoons garlic paste
1 tablespoon ginger paste
1 tablespoon green chilli paste
1 tablespoon coriander root paste
1 teaspoon freshly cracked black pepper
2 teaspoons fish sauce
2 teaspoons oyster sauce
2 teaspoons palm sugar
1 teaspoon salt
¼ cup + 2 tablespoons mustard oil
Serve with, onion pickle and pitted green olives

DETAILS :

PREPARE THE KIDNEY: Make a cut in the thin membrane surrounding the kidneys using a sharp knife. Remove and discard the membrane. Slice the kidneys in half, lengthwise. Cut out and discard the round lump of white fat in the centre of each kidney half. Rinse the kidney thoroughly under running water. Fill a large bowl with cold water, vinegar, and salt. Put the beef kidney into the water and allow them to soak for two hours. Drain the kidney in a colander, discarding the liquid. Pat the meat dry with paper towels.

MARINATE the kidney halves with all the marinade ingredients with ¼ cup of mustard oil. Keep overnight in the refrigerator.

PREHEAT the grill or a heavy skillet with 2 tablespoons mustard oil. Remove the kidney halves from the marinade and place them on the grill. Grill the kidney halves for 7 minutes on each side (depending on the quality) and brush the marination in between. Do not overcook them or they’ll be dry and rubbery. Slice or can serve whole with the said condiments.
