I had never been much of a salad lover. It was my daughter-in-law, Mehnaz, who convinced me that salads are not just healthy, but when made well, a salad can be tasty and a meal by itself. This gave me the right incentive. I began to enjoy making salads and adding them to my folder of recipes. Here, I present to you some of my signature salad recipes. I love vegetables. Creating new recipes with vegetables is a joy for me.

“ Lotkon is a well-known fruit in Bangladesh. Its scientific name is “Baccaurea motleyana.” Each fruit has velvety pinkish, yellow, or brown skin, which wrinkles at ripening and is filled with a whitish pulp containing 3 to 5 seeds. The pulp is sweet to acidic in taste.”
SPICY DRESSING:
1 tablespoon mint, minced 1 tablespoon garlic, minced 2 tablespoons tamarind pulp 1 tablespoon date pulp 1 tablespoon caramelised shallot ½ teaspoon salt 2 teaspoons roasted dry chilli powder ¼ cup water
BEEF MARINADE:
300 g beef tenderloin 1 teaspoon garlic paste 2 teaspoons balsamic vinegar ½ teaspoon salt ¼ teaspoon freshly cracked black pepper

SALAD:
200 g lotkon 2 tablespoons lemongrass, thinly sliced 2 tablespoons mint, chopped 2 tablespoons spring onion, cut into ½-inch lengths 2 teaspoons red spur chillies, diagonally cut ¼ cup carrot, shredded 2 tablespoons spicy dressing Lettuce for serving 1 teaspoon lemon zest

DETAILS :
DRESSING: Combine all the ingredients in a blender and process until smooth. Taste and adjust the seasoning.
WASH and pat dry the meat. Marinate the beef with all the marinade ingredients for 1 hour.
HEAT a grill to high heat. Spray a little oil and grill the marinated beef for 10-12 minutes. Cover and let it rest for 10 minutes, and then cut as thinly as you wish.
SCOOP out the lotkon flesh and separate the fruity seeds.
MIX the grilled beef, spicy dressing, lemongrass, mint, spring onions, red spur chillies, and carrots in a bowl. Toss to combine. In a serving dish arrange the lettuce and top up with the salad. Sprinkle with the lemon zest and serve. Left-over dressing can be preserved in the refrigerator for a week.
