Soups are among the most common form of food in all parts of the world. Generally, the very mention of a soup brings forth the thought that it is a hot liquid dish, consisting of vegetables or fish or meat, or just the broth itself like the well-known Italian Minestrone. But soups also have cold versions like the French Vichyssoise, the Russian Borscht, and the Spanish Gazpacho, among others. The taste of a soup mainly depends on the flavour of the stock, which forms the base of any soup.

5 dry red chillies ¼ cup shallot, cut into small pieces 2 tablespoons galangal, thinly sliced 100 g of any white fish meat, boiled, pin-boned, and minced ½ teaspoon shrimp paste ½ teaspoon salt Make a fine paste with all the ingredients.

6 big freshwater shrimps (about 600 g) 3 cups water 1 tablespoon chilli paste 1 cauliflower (about 250 g), broken into florets ½ cup white radish, sliced ½ cup long green beans, cut into 1-inch-long pieces 2 cups cabbage, cut into 2-inch-long pieces 5 cherry tomatoes, halved 2 tablespoons palm sugar 2 tablespoons fish sauce ¼ cup tamarind juice

DETAILS :
CHILLI PASTE: Cut the dry chillies into small pieces, and soak in water for 5 minutes. Discard the seeds and make a fine paste with all the above-mentioned ingredients.
WASH and devein the shrimps. Keep the skin and head.
ADD 3 cups of water to a soup pot and bring to a boil on high heat. Add the chilli paste, and let it boil on low heat for 5-6 minutes. Add all the vegetables except cabbage and tomatoes.
WHEN the vegetables are cooked, add cabbage, tomatoes, fish sauce, palm sugar, and tamarind juice. Boil for 2 minutes on high heat.
ADD the shrimps. Simmer for 3 to 4 minutes, taste, and adjust the seasoning. Remove the soup pot from the heat. Serve hot.
