TREASURES FROM WATER

While growing up, I was made aware of a famous Bengali proverb describing Bengal as a land where there is always rice in the house and fish in the pond. This saying has lasted with time, more so when it comes to fish. The sight of a shining, silvery Hilsa is a treat to every Bengali eye. Added to it is the abundance of saltwater fish from the Bay of Bengal. I have a pond in my garden house. I am growing popular Bengali varieties of fish. Nothing can give me bigger pleasure than cooking with fresh fish from my own pond.

CRAB-STUFFED POTATOES

4 potatoes (about 1 kg)
½ cup milk
½ cup butter
½ cup cheddar cheese, grated (some
extra for topping)
1 tablespoon Dijon mustard
½ teaspoon salt
½ teaspoon freshly cracked black pepper
2 teaspoons garlic powder
1 cup crab meat, boiled
¼ cup coriander leaves, chopped
1 tablespoon red spur chilli, chopped
¼ cup spring onion, thinly sliced
1 tablespoon kaffir lime leaves, thinly sliced
2 tablespoons caramelised onions
¼ teaspoon paprika powder

৪ টি আআলু (প্রায় ১ কেকেজি)
½ কাপ দুধ
½ কাপ মাখনন
½ কাপ চেডার পনির, গ্রেট করা (টপিংয়ের জন্য কিছু extra)
১ টেবিল চামচ ডিজন সরিষা
½ চা চামচ salt
½ চা চামচ কালো গোলমরিচ, আধ ভাঙ্গা
২ চা চামচ রসুনের গুঁড়া
1 cup crab meat, boiled
¼ কাপ ধনেপাতা, কুঁচি
১ টেবিল চামচ লাল শিমমলা মরিচ, কুঁচি
¼ কাপ পেয়াজপাতা, মিহি কুঁচি
১ টেবিলল চামচ কাফিরর লাইম পাতা, কুঁচি
২ টেবিল চামচ ক্যারামেলাইজ করা পেঁয়ায়াজ
¼ teaspoon paprika powder

DETAILS :

PREHEAT oven to 250ºC. Cover the potatoes individually with foil paper and bake for 1 hour or until tender.

CUT a thin portion of the potatoes lengthwise from the top for an opening. Scoop out the flesh into a bowl carefully to save the skin. Slice the top cut of the potato and mix with all the ingredients from milk to garlic powder along with the potato flesh. With a hand blender mix until smooth paste forms.

ADD the crab meat, coriander leaves, spur chilli, half of the spring onion, lime leaves, and caramelized onions. Mix well with a spatula until soft. Taste and adjust the seasoning. Spoon the mixture into the potato skins. Top with the extra grated cheese.

PLACE the stuffed potatoes in a baking pan. Bake for 10-12 minutes or until heated through. Sprinkle with spring onion and paprika powder.
