TREASURES FROM WATER

While growing up, I was made aware of a famous Bengali proverb describing Bengal as a land where there is always rice in the house and fish in the pond. This saying has lasted with time, more so when it comes to fish. The sight of a shining, silvery Hilsa is a treat to every Bengali eye. Added to it is the abundance of saltwater fish from the Bay of Bengal. I have a pond in my garden house. I am growing popular Bengali varieties of fish. Nothing can give me bigger pleasure than cooking with fresh fish from my own pond.

SHRIMP MIXTURE:

250 g raw shrimp meat
50 g grey feather back fish meat
1 chicken egg yolk
2 teaspoons coriander root, crushed
2 teaspoons garlic paste
¼ teaspoon white pepper powder
½ teaspoon green chilli, minced
1 tablespoon lemongrass paste

২৫০ গ্রাম raw চিংড়ির মাংস
৫০ গ্রাম ফলি মাছ, কাঁটা ছাড়া
১ টি মুরগির ডিমের কুসুম
২ চা চামচ ধনেপাতার গুঁড়ি, ছেঁচা
২ চা চামচ রসুনের পেস্ট
¼ চা চামচ সাদা গোলমরিচের গুঁড়া
½ চা চামচ raw মরিচ, কিমা করা
১ টেবিল চামচ লেমনগ্রাস পেস্ট

SEASONING AND OTHERS:

2 teaspoons sesame oil
2 teaspoons light soya sauce
1 teaspoon oyster sauce
¼ teaspoon salt
5-6 lemongrass stalks
2 cups oil
½ cup flour
1 chicken egg, beaten
½ cup breadcrumbs

২ চা চামচ তিলের তেল
২ চা চামচ হাললকা soya সস
১ চা চামচ অয়েস্টার সস
1/4 চা চামচ salt
৫–৬ টি লেমন গ্রাসের গুঁড়ি
2 cups oil
½ cup flour
১ টি মুরগির ডিম, ফেটানো
½ cup breadcrumbs

DETAILS :

SHRIMP MIXTURE: In a food processor, add all the ingredients, process until smooth and sticky paste forms, and transfer into a bowl.

ADD all the seasoning ingredients from sesame oil to salt in the shrimp mixture. Mix well to incorporate with the spices.

CUT the lemongrass into 4-inch lengths from the bottom. Shape the shrimp mixture using 2 tablespoons each, into 2-inch oblong strips and thread the mixture onto the lemongrass. Repeat until all the mixture is used up.

HEAT the oil in a frying pan on medium-low heat. Toss the shrimp
mixture portion only in flour, dip in egg, and roll in the breadcrumbs.
Deep fry until golden brown. Serve with a preferred sauce.
