OFFAL ADVENTURES A FAMILY FAVOURITE

Offal is the collective term for the internal organs and entrails of a butchered animal. Some cultures strongly consider offal as food to be ‘taboo’, while others use it as delicacies. Such as foie gra, pate, and haggis—are internationally regarded as gourmet food in the culinary arts. Fish offals can be very tasty. Delish is the word for offal dishes for me. It is precisely because of this I have included a separate chapter on offal dishes in this book. I would recommend using fresh ‘offals’ for cooking.

My son was very young, and we were enjoying the beach in Pattaya, Thailand. A man was carrying some grilled chicken wings. We had some and they were excellent. From the next day onwards, he used to bring the chicken wings to us and address me as “Hello Darling.” Hence the name. Here is the recipe—with a twist!

1 kg fresh chicken wings
2 tablespoons garlic paste
2 teaspoons green chilli paste
2 tablespoons fish sauce
2 tablespoons lemon juice
2 tablespoons kaffir lime leaves, minced
2 cups oil to fry
Serve with Thai sweet chilli sauce (page 358)

DETAILS :

MARINATE the chicken wings overnight with all the ingredients from garlic to kaffir lime leaves for a better taste.

HEAT oil, and fry the marinated wings until golden brown. Transfer onto kitchen paper. Serve immediately.
