Life On A Plate

DADABHAI AND DADU

My grandfather (Dada Bhai) comes from Gopalganj district, while my grandmother (Dadu) is from Khulna district of Bangladesh. Since a major part of my childhood was spent with my grandparents, I, therefore, feel that my journey with Life on a Plate should start with the specialties of Gopalganj and Khulna, with my own twists on the recipes!

Garlic is my favorite. So, I try to
showcase garlic whenever possible.

1 kg climbing perch fish
2 teaspoons turmeric powder
2 teaspoons salt
½ cup + 2 tablespoons coconut oil
2 garlic bulbs, peeled
½ cup onion paste
2 teaspoons dry chilli powder
2 teaspoons coriander powder
2 teaspoons roasted cumin powder
2 teaspoons sugar
2 teaspoons ginger juice
2 cups homemade coconut milk
5 green chillies, halved

1 কেজি কৈ মাছ

2 চা চামচ হলুদ গুঁড়া

2 চা চামচ লবন

½কাপ + 2 টেবিল চামচ নারকেল তেল

2 রসুনের বাল্ব, খোসা ছাড়ানো

½কাপ পেঁয়াজ বাটা

2 চা চামচ শুকনো মরিচের গুঁড়া

2 চা চামচ ধনে গুঁড়া

২ চা চামচ ভাঁজা জিরার গুড়া

২ চা চামচ চিনি চিনি

২ চা চামচ আদার রস

২ কাঁপ নারকেলর দুধ

৫টি কাচা মরিচ

DETAILS :

CLEAN, wash, and drain the fish. Add 1 teaspoon turmeric powder, and 1 teaspoon salt and mix well with the fish. Heat 2 tablespoons of oil and shallow fry the fish for 2 minutes in low heat on each side. Transfer the fish to a plate. Fry the garlic in the same oil until brown. Remove and set aside.

IN  a separate pan, add ½ cup of oil. Once the oil is hot, add onion paste and fry till the aroma develops. Add a little water to prevent it from burning. Add all the ingredients from dry chilli powder to ginger juice.

MIX well, add 1 cup of coconut milk, and stir occasionally. Once the oil starts collecting at the edges, add the rest of the coconut milk. When the milk starts simmering, add the fried fish and garlic. Cover and cook over low heat till the gravy thickens. Taste and adjust the seasoning. Add green chilies, cover, and cook for 5 minutes over low heat. Serve hot.
