The word “bharta” means “mash and mix.” Bhortas are the simplest and the ultimate comfort food of Bangladesh. The key to Bangladeshi style bhortas are mustard oil, garlic, onion, and chilli. Bhortas are the most informal everyday food for Bangladeshis. It is usually a very spicy preparation. However, It can be adjusted according to your taste! Bhartas are best enjoyed with ‘Steamed rice’ and ‘Panta bhat,’ which means ‘fermented rice.’

250 g purple potatoes 7-8 red dry chillies ¼ cup chicken, minced ¼ teaspoon garlic paste ¼ teaspoon ginger paste 1 teaspoon salt ½ cup shallot, thinly sliced 2 tablespoons mustard oil 2 tablespoons coriander leaves, chopped
২৫০ গ্রাম বেগুনি আলু
৭-৮ লাল শুকনো মরিচ
¼ কাপ মুরগি, কিমা
¼ চা চামচ রসুনের পেস্ট
¼ চা চামচ আদা পেস্ট
১ চা চামচ ললবণ
½ কাকাপ দেশি পেঁয়াজ, কুঁচি
২ টেবিল চামচ সরিষার তেল
২ টেবিল চামচ ধনে পাতা কুচি
DETAILS :
BOIL the potatoes, peel, and mash finely. Dry roast the chillies.
BOIL the chicken with garlic, ginger, and salt.
IN a bowl, mix well the salt, shallot, and roasted dry chillies with the mustard oil. Add this onion mixture to the potato mash and mix well. Add the boiled chicken and coriander leaves and make a soft mix. Taste and adjust the seasoning.
