The word “bharta” means “mash and mix.” Bhortas are the simplest and the ultimate comfort food of Bangladesh. The key to Bangladeshi style bhortas are mustard oil, garlic, onion, and chilli. Bhortas are the most informal everyday food for Bangladeshis. It is usually a very spicy preparation. However, It can be adjusted according to your taste! Bhartas are best enjoyed with ‘Steamed rice’ and ‘Panta bhat,’ which means ‘fermented rice.’

500 g spotted snakehead fish 1 tablespoon salt ¼ teaspoon turmeric powder ½ teaspoon dry chilli powder 2 teaspoons lemon juice 2 tablespoons mustard oil 1 cup radish, thinly sliced 7 dry red chillies ½ cup shallot, sliced 2 teaspoons lemon zest

১ টেবিল চামচ ললবণ
¼ চা চামচ হলুদ গুঁড়া
½ চা চচামচ শুকনো মরিচের গুঁড়া
২ চা চামচ লেবুর রস
২ টেবিল চামচ সরিষার তেল
১ কাপ মূলা, পাতলা করে কাটা
৭ টি শুকনো লাল মরিচ
½ ককাপ দেশি পেঁয়াজ
২ চা চামচ লেবুর সবুজ অংশ, কুঁচি
DETAILS :
CLEAN, and wash the fish. Pat dry with a kitchen towel. Marinate the fish with 1 teaspoon salt, turmeric, chilli powder, and lemon juice for 30 minutes. Heat 1 tablespoon of mustard oil and shallow fry the fish until light golden brown. Debone the fish and set it aside.
MARINATE the radish with 1 teaspoon salt for 15 minutes. Squeeze out the water as much as possible.
DRY roast the chillies. Add 1 tablespoon mustard oil, 1 teaspoon salt, dry chillies, shallot, and lemon zest in a mixing bowl, and mix well. Add the fish and the radish. Gently mix with the onion mixture. Taste and adjust the seasoning.
