Raw Jackfruit has a mild taste and meat-like texture that lends itself to being called a “vegetable meat”, we cook it in different ways. The ripe fruit is sweet and is more often used for desserts. Jackfruit is known for its strong smell and sweet custardy texture. Roasted ripe jackfruit seeds taste as wonderful as roasted chestnuts. Here are some recipes using the national fruit of Bangladesh.

1 cup jackfruit seeds (about 200 g) 4 garlic cloves 2 teaspoons yellow mustard seeds 2 dry red chillies 1⁄3 cup almonds, toasted and crushed ½ teaspoon salt ½ cup desiccated coconut ¼ cup green coconut water 1 teaspoon mustard oil

৪ কোয়া রসুন
২ চা চামচ হলুদ সরিষার বীজ
২ শুকনো লাল মরিচ
1⁄3 কাপ বাদাম, টোস্ট করা এবং গুঁড়ো করা
½ চা চামচ ললবণ
½ কাকাপ নারকেল, ভাঁজা
¼ কাপ ডাবের পানি
১ চা চামচ সরিষার তেল
DETAILS :
DRY roast the seeds and the garlic cloves with the skin on in a heavy skillet or on charcoal until the seeds are tender. Roasting helps to remove the hard skin easily.
DRY roast the mustard seeds and the red chillies, allow them to cool, and make a fine powder.
ADD all the ingredients except mustard oil in a food processor, and process to make a fine smooth paste. Mix in the mustard oil. Taste and adjust the seasoning. Use the spread to make a sandwich. Enjoy
