JACKFRUIT THE NATIONAL FRUIT OF BANGLADESH

Raw Jackfruit has a mild taste and meat-like texture that lends itself to being called a “vegetable meat”, we cook it in different ways. The ripe fruit is sweet and is more often used for desserts. Jackfruit is known for its strong smell and sweet custardy texture. Roasted ripe jackfruit seeds taste as wonderful as roasted chestnuts. Here are some recipes using the national fruit of Bangladesh.

3 cups raw jackfruit (about 600 g),
thinly sliced, seeds removed
1 cup molasses + ¼ cup water
¼ cup ghee/clarified butter
¼ cup khirsha/concentrated
milk (page 350)
½ teaspoon cardamom powder
¼ teaspoon ginger powder
2 tablespoons raisins
10 cashew nuts
1 tablespoon ghee/clarified butter

৩ কাপ কাঁচা কাঁঠাল (প্রায় ৬০০ গ্রাম),

পাতলা করে কাটা, বীজ সরানো

১ কাপ গুড় + ¼ কাপ জল

¼ কাপ ঘি

¼ কাপ খিরসা (৩৫০পৃষ্ঠা)

½ চা চামচ এলাচ গুঁড়া

¼ চা চামচ আদা গুঁড়ো

২ টেবিল চামচ কিশমিশ

১০ টি কাজুবাদাম

১ টেবিল চামচ ঘি

DETAILS :

IN a pot, boil jackfruit slices until tender. Strain and discard the water. Pound the boiled jackfruits until a smooth pulp is formed. Measure the pulp and set it aside. For 1 cup of jackfruit pulp, add 1 cup of molasses.

HEAT a saucepan and add the grated molasses with ¼ cup of water. Stir well till the molasses get nicely dissolved in water. Strain and pour it into a pan, and bring to a boil.

ADD the pounded jackfruit in the molasses liquid and mix well. Keep stirring till the pulp is nicely incorporated and the mixture thickens. Add ¼ cup of ghee and ¼ cup khirsha, and keep stirring on low heat till it is nicely incorporated with the jackfruit mixture. When the mixture starts to roll like a ball without sticking to the sides of the pan, add the cardamom, ginger powder, and raisins. Mix well.

HEAT 1 tablespoon of ghee and fry the cashew nuts. Chop and add to the pan and mix. Remove from heat and let it cool. Use 1 tablespoon of the mixture and make a small ball. Repeat until all the mixture is used.
