JACKFRUIT THE NATIONAL FRUIT OF BANGLADESH

Raw Jackfruit has a mild taste and meat-like texture that lends itself to being called a “vegetable meat”, we cook it in different ways. The ripe fruit is sweet and is more often used for desserts. Jackfruit is known for its strong smell and sweet custardy texture. Roasted ripe jackfruit seeds taste as wonderful as roasted chestnuts. Here are some recipes using the national fruit of Bangladesh.

1 cup jackfruit seeds (about 200 g)
2 cups water
2 tablespoons sea salt
Bamboo skewers

PLACE the seeds in a saucepan, pour enough cold water to cover them, and bring to a boil. Reduce the heat and simmer for 15-20 minutes, or until a bamboo skewer easily passes through the seeds. Drain the seeds. Discard the outer skin.

THREAD the boiled seeds onto the skewers, heat an iron cast pan and grill them slightly. Sprinkle sea salt and enjoy. They are best eaten the day they are made. Otherwise, chances are they will become hard.
