FRIED RICE FLOUR CAKE

  A very common dish of Sylhet—with my twist!

¾ cup + 2 tablespoons of water
½ teaspoon ginger paste
¼ teaspoon turmeric powder
½ teaspoon salt
½ cup rice flour
½ teaspoon nigella seeds
1 chicken egg
3 tablespoons shallots, thinly sliced
2 teaspoons green chillies, thinly sliced
¼ cup oil
2 teaspoons ginger, thinly sliced
1 teaspoon garlic, thinly sliced
1 tablespoon tomatoes, minced
½ cup Dhaka cheese, shredded
¼ cup coriander leaves, chopped (optional)

¾ কাপ + 2 টেবিল চামচ জল

½ চা চামচ আদার পেস্ট

¼ চা চামচ হলুদ গুঁড়া

½ চা চামচ লববণ

½ কাপ চালের গুড়ো

½ চা চামচ কাল জিরা

১ মুরগির ডিম

৩ টেবিল চামচ শ্যালটস, পাতলা করে কাটা

২ চা চামচ কাঁচামরিচ, কুচি

১/৪ কাঁপ তেল

২ চা চামচ আদা, কুচি

১ চা চামচ রসুন, কুচি

১ টেবিল চামচ টমেটো, কিমা

আধা কাকপ ঢাকা পনির, কাটা

¼ কাপ ধনে পাতা, কাটা (ঐচ্ছিচ্ছক)

DETAILS :

HEAT the water. Once it starts boiling, lower the heat, and add ginger, turmeric, and salt. Stir to mix well. Remove from the heat. Pour in the rice flour and nigella seeds to make the dough. Knead the dough well. Roll out ¼-inch thick and cut with a cookie cutter for a nice look. Heat water in a steamer, place the rice cakes on a tray, and steam for 10 minutes.

MAKE an omelette with the egg, 1 teaspoon shallot, ¼ teaspoon green chilli, a pinch of salt, and 1 teaspoon oil. Cut into thin strips. Set aside.

HEAT a big frying pan, and add oil. Fry the sliced ginger, garlic, green chilli, shallot, and minced tomatoes. Add the steamed rice cakes and fry until light golden brown. Arrange the fried cakes in a serving dish. Top up with sliced egg, cheese, and coriander leaves. Serve hot.
