RICE, FLOUR & NOODLES

Rice is the staple food of about 165 million people in Bangladesh. Almost all of the 13 million farm families in the country grow rice.

For fried rice, always cook the rice grains the previous night and keep them in the refrigerator.

Pasta and noodles are usually cooked for 6 to 7 minutes, except for glass noodles. I would suggest following the package instructions for each and every type of noodles or pasta to make it al dente.

Salty Hilsa, is known in Bangladesh as Nona Ilish. Generally, it is cooked with vegetables or for making bharta. Here I present this delicious protein with rice.

BATTER:

100 g salted hilsa fish
3 tablespoons oil for frying
2 tablespoons garlic, minced
150 g spinach, cut into ½-inch strips
2 cups cooked basmati rice
1 teaspoon soya sauce
2 teaspoons sugar

১০০ গ্রাম নোনা ইলিশ

ভাজার জন্য ৩ টেবিল চামচ তেল

২ টেবিল চামচ রসুনের কিমা,

১৫০ গ্রাম পালং শাক, ½-ইঞ্চি স্ট্রিপে কাটা

২কাপ রান্না করা বাসমতি চাল

১ চা চামচ সয়া সস

2 চা চামচ চিনিনি

Condiments:

Cucumber, lemon, and spring onion.

পরিবেশনের জন্য, শসা, লেবু ও পেয়াজপাতা।

DETAILS :

SOAK the salted hilsa in warm water for 10 minutes to get rid of the excess salt; drain. Mince half of the hilsa and set it aside. Dice the other half and fry in 1 tablespoon of oil; set aside.

IN a pan, heat 2 tablespoons of oil on medium heat, fry the garlic until golden brown and add the minced hilsa along with the spinach. Sprinkle some water, and stir fry the spinach quickly. Add cooked rice, soya sauce, and sugar. Toss to combine. Remove from the heat. Taste and adjust the seasoning. Scoop the fried rice onto a serving plate. Top with diced fried hilsa. Serve with condiments.
