Rice is the staple food of about 165 million people in Bangladesh. Almost all of the 13 million farm families in the country grow rice.
For fried rice, always cook the rice grains the previous night and keep them in the refrigerator.
Pasta and noodles are usually cooked for 6 to 7 minutes, except for glass noodles. I would suggest following the package instructions for each and every type of noodles or pasta to make it al dente.

1 kg lobster (4 pieces) 2 cups basmati rice ½ cup oil ½ cups peas, boiled ¼ cup onion paste 2 teaspoons garlic paste 2 teaspoons ginger paste ½ teaspoon turmeric powder 1 teaspoon dry chilli powder 1 teaspoon paprika powder 1 tablespoon coriander powder ½ cup sour yoghurt 1 tablespoon +1 teaspoons salt ¼ teaspoon cinnamon powder ¼ teaspoon clove powder 5-6 green chillies 4 cups water ½ cup peas, boiled 10 pitted olives ½ cup sweet pineapple grated 1 teaspoon roasted cumin powder
১ কেজি গললদা চিংড়ী (৪ টি)
২ কাপ বাসমতি চাল
½ কাপপ তেল
½ কাপ মটর, সেদ্ধ
¼ কাপ পেঁয়াজ বাটা
২ চা চামচ রসুন বাটা
২ চা চামচ আদা বাটা
½ চা চামচ হলুদ গুঁড়া
১ চা চামচ শুকনো মরিচ গুঁড়া
1 teaspoon paprika powder
1 tablespoon coriander powder
১ কাপপপ টক দই
1 tablespoon +1 teaspoon salt
¼ চা চামচ দারুচিনি গুঁড়া
¼ চা চামচ লবঙ্গ গুঁড়া
৫-৬ টি কাঁচা মরিচ
৪ কাপ জল
½ কাপ মটরশুঁটি, স্বেদ
১০ টি পিটেড করা জলপাই
½ cup sweet pineapple grated
১ চা চামচ ভাজা জিরা গুঁড়া
GARNISH:
Caramelised onion, tomato, green chilli, and lemon.
DETAILS :
RINSE the lobster in cold water. Remove the skin from the middle, and keep the head and tail. Using the tip of a knife, carefully remove the sand vein that runs along the lobster’s back. Cut the legs into pieces. Wash again.
SOAK the basmati rice for 20 minutes, wash and drain. Heat 2 tablespoons of oil in a flat bottom pot and fry the lobsters and the legs just for 1 minute on each side and remove from the oil.
IN the same pot, add the rest of the oil. Stir in all the ingredients from onion paste to salt. Add ½ cup of water and cook the spice mixture. When the water starts boiling add the fried lobsters and the legs. Cook uncovered for 7 minutes on medium heat. Remove the lobsters and the legs from the pot, cover and keep aside.
ADD the rice to the pot along with the cinnamon, clove powder, and green chillies. Fry for 3-4 minutes, add 3 cups of water, stir to mix well, reduce the heat to low. Cover and cook for about 15 minutes.
ADD the lobster, legs, peas, olive, pineapple, and cumin powder. Cover and cook for 5 more minutes. Taste and adjust the seasoning. Turn off the heat. Let it rest for 10 minutes. Garnish and serve hot.
