Rice is the staple food of about 165 million people in Bangladesh. Almost all of the 13 million farm families in the country grow rice. For fried rice, always cook the rice grains the previous night and keep them in the refrigerator. Pasta and noodles are usually cooked for 6 to 7 minutes, except for glass noodles. I would suggest following the package instructions for each and every type of noodles or pasta to make it al dente.

BATTER:
¾ cup rice flour 1 teaspoon turmeric powder ½ teaspoon sugar ¼ teaspoon salt ½ cup coconut milk ¼ cup water, if needed more 2 tablespoons spring onions, cut into thin rounds 2 tablespoons oil for brushing 6 quail eggs

¼ চা চামচ ললবণ
½ ককাপ নারকেলের দুধ
¼ কাপ পানি, প্রয়োজনে আরও
২ টেবিল চামচ পেঁয়াজ পাতা, কুঁচি,
২ টেবিল চামচ তেল ব্রাশ করার জন্য
৬ টি কোয়েল ডিম
পরিবেশনের জন্য, পেঁয়াজ পাতা ও লেমনগ্রাস সস (৩৫৩)

Spring onions and lemongrass sauce (page 353)
DETAILS :
SIFT the flour. Add all the ingredients from rice flour to water and whisk together to form a smooth batter. Add the spring onion and stir to combine.
HEAT the pancake pot, and brush a little oil into each cup. Pour 2 tablespoons of the batter into each of the cups and rotate the pan to coat the sides.
CRACK a quail egg into each cup and cook for about 1 minute over medium-low heat or until the batter is crisp. Remove the pancakes using a spoon and arrange them on a serving plate. Serve with condiments.
